Banana Bread

I was thinking about what I wanted to bake when I noticed some very, very, very ripe bananas. And with that I knew, I had to bake a banana bread. When you make banana bread your bananas have to be ripe, i.e. black! The bananas in my picture are not ripe but I promise I used ripe bananas! The truth is I thought having the ripe bananas in the picture would not look good. Anyways, the following recipe is from The America’s Test Kitchen: The Family Baking Book. I cut the recipe in half because one half was going to be a chocolate banana bread! So, first I made the regular banana bread. 

Ingredients:

1 cup flour

6 tablespoons sugar

¼ & 1/8 teaspoons baking soda

¼ teaspoons salt

1 ½ large very ripe bananas, mashed well.  

3 tablespoons unsalted butter, melted and cooled

1 large egg

1/8 cup whole or low-fat plain yogurt

½ teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degree Fahrenheit and grease your loaf pan.
  2. Melt your butter. We want it to cool down while we prepare the dry ingredients.
  3. Whisk flour, sugar, baking soda, and salt together in a medium size bowl.
  4. Whisk mashed bananas, melted and COOLED butter, egg, yogurt and vanilla.                          Banana Bread 03
  5. Fold banana mixture into the flour mixture. The batter will be thick!

 

Now time for the chocolate banana bread!

Ingredients:

1 cup flour

1 tablespoons sugar

¼ cup grated bittersweet chocolate

1 tablespoon cocoa powder

¼ & 1/8 teaspoons baking soda

¼ teaspoons salt

1 ½ large very ripe bananas

3 tablespoons unsalted butter, melted and cooled

1 large egg

1/8 cup whole or low-fat plain yogurt

½ teaspoon vanilla extract

Directions:

  1. Melt your butter. We want it to cool down while we prepare the dry ingredients.
  2. If you do not have grated chocolate, you can use a blender. The picture down below shows the chocolate before and after being the in blender.                                                                             Banana Bread 01
  3. Whisk flour, grated chocolate, cocoa powder sugar, baking soda, and salt together in a medium size bowl.                                                          Banana bread 04
  4. Whisk mashed bananas, melted and COOLED butter, egg, yogurt and vanilla.
  5. Fold banana mixture into the flour mixture. The batter will be thick!
  6. Combine both batters in loaf pan.                                                                Banana Bread 07
  7. Bake for about 55 minutes, rotating the pan halfway through baking.

Tada! That is all! This bread is soooo moist and only lasted a total of two days in my house.
